Hello everyone! We've got a very yummy recipe for you. It's actually a recipe that Ginger Shumway made for the Enrichment night WAY back in March! She had so many requests for it and so did we! It's the chicken lasagna recipe with bread crumbs. Here it is:
8 oz. lasagna noodles
2 cans cream of mushroom soup
1 cup milk
¾ tsp. salt
½ tsp. poultry seasoning
8 oz. cream cheese, softened
1 cup cottage cheese
½ cup chopped onion
¼ cup minced parsley
4 cups chicken, cooked and shredded
1 ½ cups bread crumbs
3 heaping Tbsp. sour cream
Grated cheddar cheese (to taste)
Grated mozzarella cheese (to taste)
Butter
Cook noodles. Beat cottage cheese, cream cheese, onion, parsley and sour cream together. Add soup, milk, and seasonings. In a large pan, layer noodles, chicken, soup mix, and cheeses. Repeat layers. Cover with bread crumbs. Drizzle some melted butter on top. Bake at 375 for 45 minutes.
